摘要: 舰船食品储存质量直接关系到船员的身体健康,而蔬果保鲜是食品保存中的难点,也是影响舰船食品自给力的重要因素。文章介绍了当前主流的船用蔬果保鲜技术的原理和特性,并结合各类舰船对食品储存需求的特点,从实用性、经济性和可行性出发,分析探讨了不同类型舰船所适用的蔬果保鲜技术方案,为今后舰船的蔬果保鲜设计提供参考。

Abstract: The quality of ship food storage is directly related to the health of the crew. The preservation of fruit and vegetables, as a difficulty in the food storage, is an important factor affecting the self-sufficiency of the ship food. This paper introduces the principles and characteristics of the popular shipboard technologies for the preservation of fruit and vegetables at present. It also analyzes and discusses the application of the preservation technologies of fruit and vegetables on the different types of the military auxiliary ships from the practicability, economy and feasibility by combining with the characteristics of the food storage requirements for the various types of military auxiliary ships. It can provide reference for the design of the preservation of fruit and vegetables for military ships in the future.
